I would like to use this template because it is the only template that shows the main menu at the bottom of the screen and keeps it on top when scrolling down.
Is it possible to replace the static starting image by a slideshow that will behave the same way?

Sorry to say that option is not available with our Central template. The only slideshow option available to our Central template is that demonstrated at the following URL..http://demo.joomla51.com/0118/index.php/features/module-positions

That's what I had already discovered.
The slideshow doesn't seem to be responsive. Height of the module position can be adjusted I suppose.
Is there another template I can use to achieve what I want?

In J51-boutique and J51-vitality the main menu disappears when scrolling, whereas in J51-Central the menu scrolls up and remains visible, which I think is very important for efficient browsing. (J51-florence has a completely different lay-out)
That's why I would like to use the full screen slideshow from J51-vitality in J51-central, or have the menu Always vidible in J51-vitality.

To fix the menu/icon area of your Vitality template try adding the following to the Custom CSS field of your templates parameters...

}
