hello community,
after installing the demo assets in english i would like to install german language for the site. momentarily it seems not to be possible. how can i manage to do this?

Hello

Once you have the language pack installed, an option should be now available to you when logging in to your Joomla administration to set the language to German.

Have you tried installing the German language pack after you have installed your template demo (http://community.joomla.org/translations/joomla-3-translations.html)?
